Morgan of the USDA showed that three-fourths of American women had less than two-thirds of the calcium RDA, and 40 percent were low in vitamins B and C. In 1965 and 1966 an extremely extensive survey made by the USDA discovered the quality of diets declining from that of the 1950s. In 1965, only 50 percent of American households had diets that were rated “good” based on USDA standards; 20 percent had diets rated “poor” because they had less than two-thirds of the RDA. The survey did not measure the blood or tissue levels of the nutrients, but instead evaluated the diets only on the basis of weekly records of food purchases.
Our digestive tract can absorb only so much of a given nutrient in a given time and the leftover is eliminated through the bowel. What is not used is wasted.
